Are two mail server will conflict when send or receive in same time

 I have SME mail server 7.5 as old server work with domain ALTAWI.COM.SA
it has problems so that i decided to create new mail server meaning make new mail server in another computer with mail server 8.1 release version with same setting exist in old. 
MY Question can I leave  two mail servers computers send and receive emails in same time or must
shutdown old mail server  to work new

They will conflict if they have the same domain name & external DNS records are configured to resolve that domain to both servers, which theoretically should not be the case.
In practise you would point the external DNS records at the second server so that the domain name resolves correctly to only one server ie the sme8.1 server.

If you prefer you can rename the domain on the first server to avoid confusion, but it should not be necessary.
Also you could disable mail services on the first server, but that will stop system mails to admin, also it should not be necessary.

You need to explain your situation better, eg where are the 2 servers located & so on.

my situation as following
i have two mail server
old one
server name :mserver
domain :altawi.com.sa
dns :xxx.xxx.xxx.xxx
server ip 192.168.1.4
New server :
server name :mserver
domain :altawi.com.sa
dns :xxx.xxx.xxx.xxx same dns of old mail server
server ip 192.168.1.8
and two mail server(old and new)in same network
what i change actually
and if i change computer i must change dns or leave as old

What mode is each server in, server & gateway or server only ?
Is there a router/gateway device in front of the sme servers, if so set up forwarding in the router to the sme server that is acting as the main donain server.
You still need to provide more detailed information about your network, gateway device, & how you have configured the router to foward services to your sme server(s) etc.
Why do you want 2 servers with the same domain name ?

mode of two servers is server only.
Gateway of SME is CISCO firewall router with ip 192.168.1.254 in two servers
i don't want two servers in same times but i need to configure new server with same settings of old
after i configured if new server worked i will remove old server
because old server works live
and can not remove live and work in test
Cisco firewall router connected with network in with two servers

Configure your gateway CISCO firewall router to forward services to the IP of your sme server, or otherwise configure it to forward requests for your domain to the sme8.1 server

What you mean to configure CISCO firewall router to forward services to the IP of your sme server
meaning i shutdown old mail server computer and turn on new mail server computer
and in gateway of sme mail server new write ip of router
192.168.1.254 are this what you mean
if i wrong please tell me

Your Cisco router will be sending all incoming packets (emails) on port 25 to the old mailserver Ip address. I presume. In this case all you need to do is to re-cnfigure the Cisoc router to send all packets which come in on port 25 to the new server ip address.  You can then leave both servers on, but all incoming emails will be dealt with by the new server.

It is probably easier if you do not reconfigure the gateway router.
Instead just reconfigure each sme server by swapping the IP's
ie make
sme 7.x server ip 192.168.1.8

& make sme8.1 server ip 192.168.1.4

You can safely do this on sme server by logging in as admin at a command prompt & then selecting the Configure this server option.
Step through all the settings only changing the local IP address, then at the end, save & reboot.
Please search before asking, an answer may already exist.
