I would like to use SME as an external server, where the promary MX records for 3 domains (different companies) point to the SME.

The SME server then scans the incoming mail for viruses and spam, the server would then do an MX lookup for the destination domain and then forward in this 'cleaner' mail to the respective mail servers.

Any advice on how to do this with SME would be much appreciated

SME can handle the mail for your three domains no problem, add your domains as virtual domains in server-manager

SME can scan all your mail for virii & spam, turn on scanning in server-manager.

How you get your mail out to your mail servers, someone else will have to answer.

The userguide - delegate mail server. That's if one server handles all domains. If you want one server per domain, see the "SME Server Future" bug tracker - that's a new feature request.
