Good comments Brandon. I'd also suggest that unless the Netware 3.12 server is still required for a specific Novell only reason, there may be no 'real' need to continue to use Novell. The e-smith server does a great job acting as a simple file/print server. Of course there may be 'politics' behind the decision to keep the Novell and add the e-smith server which is not worth messing with. Having said that, it is much easier administering one server then two. As for disaster recovery, the e-smith server is the clear winner when combined with a good tape backup system.
