from the message log:

But when I go to configure the server it says I only have one nic.
what am I missing?

SME server has never had any support for USB NICs, and only supports PCI NICs.

Yes, it can be made to work if you are prepared to do some tricky customisation. My statements were true - SME server only supports PCI NICs.
