What version should I be using if I plan to deploy SME Server in a small school/church setting? I'd like to try and setup an "all-in-one" solution for them.

The only current stable final release versions are 6.0 and 6.0.1, and either of those should do the job with a few additional popular (& stable) contribs.
It really depends on your requirements.

I would agree with Ray.  Pick up a version of 6.0.1 and find the update script that is floating around on the forums.

Beware, the update script changes from time to time and introduces new features which may be incompatible with the forthcoming version 7.0. You are less likely to have upgrade problems in the future if you apply minimal updates to 6.0 (or 6.0.1, which is just 6.0 rebranded - no feature differences).

No. Update script is easy to use but you will never get rid of that sometimes very special upgrades and contribs any more. And you need to, if you

a) change to 6.5 or even 7.x
b) change hardware/server.

I had some troubles after using update-script. I had to break one server down and do a complete reinstallation.

The script is ok and the add-ons work, but it of course messes up webmail, updates mysql and i was not able to set up a new server from that installation without those addons. So the script is a path to another SME-System and this will interfere with upgrades as described.

This was quite often mentioned here. We continue in german forum.
